5 Healthy Easy Chicken Crockpot Recipes

Now that fall is just around the corner and I know my life is going to be super busy for the next month and then who knows with the holidays….I thought I’d recap 5 Healthy Easy Chicken Crockpot Recipes and have them all in one post.

I love chicken cooked in the crockpot because it cooks in moist heat which means that it doesn’t dry out and is perfect for reheating throughout the week. So whether you are cooking for one or a big family these meals are simple. Though if you’re cooking for one you may want to cut down the recipes unless you don’t mind freezing some leftovers or having the same thing all week for lunch.

1. Clean and Easy Chicken in the Crockpot

When I originally made this one I made it more complicated then it needed to be by cutting up an onion and green pepper. I thought I’d want the veggies for when I turned these into tacos but to be honest the veggies didn’t reheat like I wanted them to so I didn’t end up eating them. I think this chicken has enough flavor on its own to not need that. And, if you end up making your own taco seasoning, then you can make that as spicy or garlicy or whatever you’d like to fit your taste buds.

If you get adventurous I think this chicken would be perfect for making enchiladas or even used in tortilla soup. Hmm, I sense some new kitchen experiments coming up.

2. Crockpot Whole Chicken

A whole chicken in the crockpot just might be the easiest meal ever to make; if you don’t have any trouble getting rid of the “stuffing” that comes inside the chicken.

I got this recipe from my friend Jenn and have used it over and over and over again since she shared it with me. I have experimented with different spices and stuffing on the inside of the bird. I don’t think anything can ever have enough garlic or onion (don’t worry I do brush my teeth often!), so I’ve added both to the inside of the chicken while it cooks and it turns out just delicious.

I have yet to move it to the oven after cooking it to make the outside nice and crispy because I typically discard the skin and don’t eat it. But Jenn did say that made it even more wonderful!

3. Easy Roasted Rosemary Crockpot Chicken

This recipe I got from the Texas Fit Chicks’ Blog and the only thing complicated about this was chopping all the rosemary. I can chop up an onion and some garlic in no time but working with Rosemary to chop it up was kind of a pain. Though I think I need to blame my not so sharp kitchen knives for that. Luckily I was just given a hand-me-down set of Cutco knives that I think should make this task much easier in the future.

I have to say with this recipe, next time I’d cut it down. It made enough for 7 servings, though that was with non-organic chicken breasts that were huge. I also thought this chicken was by far way better right out of the crockpot then warmed up through out the week. So this would be perfect chicken for a dinner party, that would make prepping for it SUPER easy!

4. Clean Lemon Garlic Crockpot Chicken

This recipe was a total experiment and I think as the cold days of winter approach it can be a nice flashback (or maybe fast forward) to summer time. Packed with lemon flavor this chicken is just refreshing. Though if I made any alterations I think I would use way more garlic then I did the first time around.

If you think there is such a thing as too much lemon, I think you could easily reduce the lemons to just one and it will still provide a ton of flavor. This one reheated great through out the week and had a refreshing flavor even after being reheated.

Feel free to mix up the flavor further by using a spice other than thyme; maybe try basil or Italian seasoning. Make it your own! I got this recipe from Delight’s Bites blog go check her out!

5. Cilantro Lime Crockpot Chicken

I LOVE this chicken! I’ve made it a couple times now and it is just delicious. Since cooking it I’ve even tried freezing it and then reheating it and it still tastes great! I was impressed with how well it held it’s flavor even after being frozen.

This one has quite a bit of chopping involved with the cilantro, jalapeno and garlic, but it still isn’t too bad. And trust me, it’ll be worth it!

This one also has lots of room for experimenting. If you like it spicier you can add additional jalapenos or other peppers or if you like it not so spicy don’t use any jalapenos and get a real mild salsa. You could even mix in onions for a little extra flavor if you want to go crazy!
