Beer Cheese Soup Recipe

I’ve said it before and I’ll say it again: I LOVE SOUP! I’ve got a few regulars I fix throughout the winter but am always looking to venture out and try new soup recipes.

I pinned this Beer Cheese Soup by Closet Cooking recipe awhile back and finally decided to give it a try. The first go round I stuck to Kevin’s original recipe. I should note that while Kevin (who is Kevin? He’s the author of Closet Cooking) and I have the same last name we are not related. Well at least not as far as I know. I digress, the first attempt at this soup I included the mustard despite the fact that I find mustard absolutely disgusting. I thought maybe, just maybe, it would some how not be disgusting in the soup. Wrong! So my second go round, I changed a few things up!

Beer Cheese Soup Recipe

1 pkg thick cut smokey bacon
1 onion
2 stalks celery
2 carrots
2 jalapenos
2 garlic cloves
1 tsp thyme
2 Tbs butter
1/4 C flour
2 C chicken broth
1/2 C heavy cream
1 Tbsp worcestershire sauce
2 C shredded cheddar cheese
1 beer (go for an ale)

First I chopped up the onion, celery, carrots, jalapenos and garlic.  Then I started cooking the bacon and once there was about 2 Tbsp of bacon grease I spooned it out and put it in my stock pot and began to cook my vegetables.  You’ll want to cook them just long enough for the onions to be translucent.  Add the thyme and cook for a minute.  Drop the butter into the pot, once it begins to boil add the flour.  Let it cook for just a few minutes so that the flour can attach to the vegetables.

Next you’ll want to deglaze the pan with the beer of your choice.  I went with Revolver’s Blood & Honey.  Then add the bacon after you have crumbled it to small pieces.  Let the vegetables and bacon cook in the beer for about 10 minutes but don’t bring it to a boil.  Add the heavy cream, worcestershire sauce and shredded cheese.  Once the cheese is melted you can season with salt and pepper and even cayenne pepper to taste.

Top it with a few jalapeno slices if you’d like and serve the beer cheese soup with bread.  It is a nice hearty soup that is sure to keep you warm this winter.  Though I wouldn’t exactly call it a healthy soup option.
