Clean Easy Teriyaki Crockpot Chicken

I have to be honest, the first time I made this Clean Easy Teriyaki Crockpot Chicken recipe I totally botched it.  I had no idea you could actually ruin a meal that is being prepared in the crockpot…well now I know you can! Learned that the hard way!  On my first attempt I cut up the chicken into bite size pieces and then cooked it on low for 8 hours.  It was a burned gross mess!  I should have done what I did with the Honey Chicken I made, remember that recipe? I need to make it again! You can check it out here.

Clean Easy Teriyaki Crockpot Chicken is super easy!  I opted to make it clean just to give it a try and I think it worked out nicely.  Though I really wish I had had some broccolini like I had when I made the honey chicken.  I love that stuff!

2 chicken breasts
1 C chicken broth
1/2 C teriyaki or soy sauce
1/3 C molasses (but really a little less then that)
honey (to make up the rest of the 1/3 C
3 minced garlic cloves
vegetables of your choice

Put the whole chicken breasts in the crockpot and add the chicken broth.  Then mix together the minced garlic, molasses, honey and soy sauce and pour over chicken.  Set the timer for 4 hours on low.  Originally this recipe called for 1/3 cup brown suger but to make it clean I opted for almost 1/3 C molasses and then added honey to it until I had a 1/3 cup.

Teriyaki-Chicken-in-CrockpotWhile the chicken is cooking you can cut up the vegetables you want to include.  I went with onion and red pepper.  When there are just 30 minutes left on the timer, pull the chicken out and cut it into bite size pieces then put it back in the crockpot.  Mix it with the sauce so that all sides are covered with the teriyaki sauce mixture.  Now add the chopped up vegetables and stir them in as well.

Unfortunately I don’t think this is a recipe that would be good to leave in the crockpot all day while you are at work.  But it does reheat really well.  So if you could make it on the weekend it could still give you easy and delicious lunches to reheat.

I served it over brown rice and it was delicious and healthy!  So glad I made the Clean Easy Teriyaki Crockpot Chicken correctly finally.

  1. I had to go to work so couldn’t get the chicken out of the crockpot in four hours. So I put two cups of broth in and left it for 8 hours. There was plenty of liquid when I got home and the chicken crumbled apart it was so juicy. I threw in the rd pepper and onion and left it on for another 30 min. Served over rice it was delicious!
