Clean Lemon Garlic Crockpot Chicken

After the shower on Saturday we had quite a few lemons left and Rebekah said I could keep them. I got to thinking of the few recipes I had pinned of lemon chicken and thought I’d try one out. Then I realized that none of them were quite what I wanted to make. So I decided to create my own version of a Clean Lemon Garlic Crockpot Chicken and hope it tasted good and that I wasn’t wasting 4 chicken breasts.

Clean Lemon Garlic Crockpot Chicken:

4 Organic Chicken Breasts
1 yellow onion
2 lemons
a whole garlic bulb
2 tablespoons of thyme
Organic Chicken broth

I like the organic chicken breasts because not only are they healthier, but they are more of a normal portion size of meat. I would have gotten fresh thyme but they didn’t have any at my grocery store so I went with the dried thyme; maybe next time I try the Clean Lemon Garlic Crockpot Chicken I’ll have fresh thyme to use.

First I poured enough chicken broth to cover the bottom of the crockpot and was about a half inch deep. Then I sliced up the onion into rings and placed a few on the bottom to create a layer of onions. Next I cleaned up the chicken and placed it in on top of the onion. I did sprinkle a little salt and pepper on to each chicken breast. Next I peeled and chopped all of the garlic cloves and then sprinkled them on top of the chicken breasts. Lastly I sliced up the lemons and placed them on the chicken breasts. I did have a few rings of the onion left so I placed them on top of the lemons, then sprinkled approximately 1 1/2 tablespoons of Thyme and put the lid on and set the timer for 6 hours on low.

Not sure why, but I decided to fix the Clean Lemon Garlic Crockpot Chicken over night so it was ready Monday morning for lunches.  After I as about halfway into the prep, I realized I should have waited until the morning to start it.  Since I did it this way I have only had it reheated and not fresh from the crockpot. Regardless it was still quite tasty for lunch on Monday.  Beth reheated it Monday night for dinner and she told me she liked it.  I’ve still got 2 servings left as I post this and it’s so nice to know I don’t HAVE to cook if I don’t want to.

A word of warning, this Clean Lemon Garlic Crockpot Chicken was very lemony, so if you want just a hint of lemon you’d probably want to only cut up one lemon instead of two.  And the small amount of broth was perfect!  Here is the finished product; it really doesn’t turn out all that pretty to look at but it definitely tasted good!
