Fall Freezer Favorites

Over the weekend I decided to work on stocking my freezer with some of my favorite cold weather meals.    I made the Taco Soup Recipe I got from my Aunt Neil and the Turkey Chili Recipe I got from my Aunt Cindy.

One of the things I love most about fall is it is easy to make week night dinners to have on hand in the freezer.  Fall meals are hearty and filling and always delicious.

The chili and soup freeze so well that they were the perfect way to start off stocking my freezer!  I also tried my hand at Butternut Squash soup.  I’ve never had butternut squash before so I wasn’t so sure, but it was delicious.  In fact, none of it made it into my freezer.  Oops?! Here’s the recipe I used if you want to give it a try: Butternut Squash.

Another thing I love to make and have on hand is chicken broth.

Homemade-Chicken-Broth

It is so easy!  If you cook a whole chicken, whether you roast it, put in the crockpot or even grill it you can use the bones to make stock.   I make it by pulling the bones apart and removing as much of the left over (if not all) of the chicken meat and toss the bones into my crock pot.  Next I toss in a few carrots and stalks of celery.  Then I quarter an onion and peel a few garlic cloves.  Once everything is in the crockpot I pour in enough water to cover the bones and let it cook on low for 8 hours.  This batch yielded 8 cups of broth; that’s the equivalent of 2 large containers of broth.  I then divided it up into manageable portions.  Above I have it in one container of 2 cups, 3 containers of 1 cup and then the jars are each 1 1/2 cups.

When I’m ready to use them I run the containers under lukewarm water and then turn them upside down into a pot to let the broth melt over the heat then it is ready to use.  You can even make broth with a rotisserie chicken you pick up at the store or with turkey bones the day after Thanksgiving.
