Sweet Potato Black Bean & Kale Skillet

I got Sweet Potatoes in my Greenling delivery again and when I stumbled up on the recipe on the Greenling blog that my meal was based on, I knew what I would be doing with my Sweet Potatoes.  This Sweet Potato Black Bean & Kale Skillet was easy to make and tasted great!

2-3 sweet potatoes, diced
1 can black beans
2 shallots (green onions), chopped
3 garlic cloves, minced
1 jalapeno
1 bunch kale
sprinkle of cumin
salt & pepper to taste
1-2 tsp olive oil

additional items for serving you may want:

tortillas
limes
avocado
sour cream or Greek yogurt

With the Sweet Potato Black Bean & Kale Skillet, the hardest part is the chopping.  But I keep forgetting that I have a mandolin (such a weird name) and that I should really be using it when I have a lot of chopping to do.  I put it to work on the sweet potatoes and the chopping went by so fast.  I changed up the proportions to fit my own taste but if you check out the original recipe on the Greenling blog you might like that version better.

Once the sweet potatoes were chopped up, I minced the garlic, chopped the shallots and washed the kale.  Drizzle olive oil in a large skillet and heat it up.  Add the sweet potatoes, shallots, garlic, jalapeno and cumin.  (I have nothing against the additional spice in the original recipe, I had never heard of it and didn’t have it, plus my spice cabinet is getting really full.)

Cook for about 8-10 minutes, stirring occasionally, but be careful not to burn the sweet potatoes.

Next add the kale, and how pretty does it look?

It’ll be tricky to stir because the kale is so big, but it’ll cook down.  You may still want to tear it up and not use the whole leaf because it doesn’t shrink that much!  Let it cook another 4-5 minutes on medium heat.

I served it in tortillas with a little dollop of Greek yogurt.

This dish had great flavor and was not anything I would have paired together if it weren’t for Greenling.  I had plenty of leftovers but I haven’t had them yet.  I curious to see how this will reheat.  I’m also thinking of putting it in a quesadilla to see how that tastes.
