Last fall I was in search of a great fluffy Peanut Butter icing recipe. I was making cupcakes for my sisters engagement party and the theme was “Cupcakes & Cocktails.” I didn’t want to just use butter cream icing, so for the the chocolate cupcakes I was determined to use a fluffy peanut butter icing.
I took to google to see what I could find and stumbled on this great recipe.
For the cupcakes I just used a box mix I picked up at the store. To me the cupcakes are more about the icing then the actual cake, that is unless the cake is just gross! This recipe is beyond easy.
Fluffy Peanut Butter Icing
1/2 a cup of butter at room temperature
1 cup of creamy peanut butter
2 cups of powder sugar
1 teaspoon vanilla
5 tablespoons of milk
First things first, measure out your peanut butter and put it in a bowl with the room temperature butter. I found whipped peanut butter and used it, I’m not sure if it really effected the way the icing turned out but it seemed like a good option. I hate using a mixer but for this recipe you really need one.
Once the butter and peanut butter have been mixed and are smooth. Slowly mix in the vanilla and powder sugar. Next mix in the milk one teaspoon at a time. You could use heavy cream here but I didn’t have in so this time I used milk. The first time I made this recipe I used heavy cream and I couldn’t really tell a difference this time.
Mix for approximately 3 minutes until desired consistency is reached.
This fluffy peanut butter icing is a little rich, but it is SO good!
I spooned the icing into a plastic bag with a large decorating tip on it and pipped it on to chocolate cupcakes. You could even top them with mini recees peanut butter cups for added pizzaz!
I have yet to serve these cupcakes to anyone who didn’t just love the fluffy peanut butter icing.
