I am always looking for great new ways to cook chicken in the crockpot that are healthy or clean and taste good reheated so that I can easily prepare lunches for the work week. When I found this recipe I figured I would give it a try because I had done similar variations of chicken in the crockpot but not this specific recipe. I made it on Sunday and have reheated this chicken for both lunch and dinner now.
It is great in a corn tortilla, in a leaf of lettuce or even on it’s own!
This is one of the easiest chicken in the crockpot recipes I have encountered and I absolutely love it.
Clean and Easy Chicken in the Crockpot
6 chicken breasts
1 packet taco seasoning (I went with a Low Sodium option)
1 jar of salsa (I used Mateo’s Salsa because is made in Frisco, TX)
Trim off the fat from the chicken and give it a quick rinse. Then place the chicken in the crockpot. Next pour the entire jar of salsa over the chicken. The awesome thing about salsa is the entire jar of salsa only has 110 calories because it’s all veggies and spices! Next sprinkle the entire packet of taco seasoning on the chicken and let it cook for 8 hours on low.
I decided I was going to eat these more like fajitas and made large slices of onions and bell peppers and just placed them on top of the chicken so that they would get cooked, but they wouldn’t be mixed in with the chicken.
When there were about 30 minutes left until the chicken in the crockpot was ready, I removed the onions and bell peppers and used two forks to shred the chicken. Then I left the shredded chicken in the crockpot the remaining time so that it was really mixed up with the slasa and taco seasoning and could spend the last 30 minutes cooking in the juice. I think this helps the meat stay more moist for reheating.
I know this may not look all that appetizing, but I promise it is delicious!
