This Easy Chicken Parmesan is a perfect dinner party entrée. I love that you can have it mostly prepared and the kitchen cleaned up before anyone comes over. I made this for both of my parents’ birthdays this year and both times it was a hit. Although I tried something new the second time around and it turned out even better!
Back in the day about 7 years ago I decided to try my hand at an MLM, Southern Living at Home. I had just bought my house and loved most of the items they sold and thought, why not? They have since gone out of business which is a total bummer but I hadn’t bought anything in years, though if you walk in my house you’ll still see all my loot!
While selling Southern Living at Home I got my hands on this little cookbook called Easy Week Night Favorites and that is where I found this Easy Chicken Parmesan recipe. I’ve been making this Easy Chicken Parmesan ever since.
Easy Chicken Parmesan
4 Chicken Breasts flattened to approximately 1/4 inch
1/2 C Italian seasoned bread crumbs
1/2 C Grated Parmesan cheese
1 large egg slightly beaten
2 Tbps Butter
1 14 oz jar of spaghetti sauce
1 C shredded Mozzarella cheese
I don’t typically have Italian seasoned bread crumbs on hand so I make my own. And, confession, I tend to use the pre-grated Parmesan cheese when I make this. Here is what I made my fancy breading out of:
I know…I know you’re impressed! I also, thanks to my sister Beth, avoided having to flatten the chicken because I picked up Chicken Scaloppini from the grocery store and the chicken was already nice and thin! Saves so much time!
Turn your oven on to 375 and lightly spray a baking dish. Let the butter start melting in your skillet and begin preparing the chicken. This is where I tried something new. I’m a fan of the ABC daytime show the Chew and one of the hosts, Michael Symon, always seems to recommend double breading. So, I thought I’d give it a try and it was well worth it! You’ll need to double up on the eggs and bread crumb mixture to do though.
Submerge the chicken breast in the beaten eggs and then move it to your breadcrumb/parmesan mixture and make sure it is covered. Then go back to your egg and repeat.
Once the chicken has been coated with breadcrumbs a second time, place it in your hot skillet and let it brown on one side before flipping it over to brown the other side. Once it is nice and brown place it in your already greased baking dish and repeat with each chicken breast until they are all browned. I often end up using more butter and haven’t actually tried this with olive oil but plan to next time I make it. If you try it this way let me know how it turns out.
Once all of the chicken is browned you’ll want to coat it with the spaghetti sauce. Just pick your favorite, any will work. Then sprinkle the shredded mozzarella on top. At this point you can cover the chicken and wait until 20 minutes before you want to serve it. It only takes 20 minutes to bake so if you get this part done a little in advance you can start cleaning up.
I like to serve the Easy Chicken Parmesan with spaghetti, so if you do that be sure to get two bottles of the same spaghetti sauce. Every time I have served the Easy Chicken Parmesan it has been a huge hit!
