Thanks to Pinterest I stumbled upon this delicious recipe for Easy Roasted Rosemary Crockpot Chicken! This recipe comes from the Texas Fit Chicks’ blog. They’ve got a crockpot Pork Tenderloin recipe I want to try too!
The ingredients for Roasted Rosemary Crockpot Chicken are simple:
6 skinless chicken breasts
1 can low sodium chicken broth
Fresh onion & garlic (if you have them)
1/2 cup fresh chopped rosemary
salt & pepper to taste
Once I’d cut up all my Rosemary, I poured the broth in to my lined crockpot and then placed the chopped onion and minced garlic in the broth and topped it all with the chicken breasts. Then I made sure the chicken was covered with the chopped rosemary.
Then I turned the crockpot on low and set the timer for 6 hours. Man did my house smell good when I got home that day!
Mom, Tiffany, Beth and I were getting together that night to plan out the menu for an upcoming shower we are throwing so I thought it was the perfect time to try out this recipe. Plus this falls into the category of “Clean Eating” which I am trying to do more of after reading the Jackie Warner book, This is Why You’re Fat. Everyone gave the Roasted Rosemary Crockpot Chicken a thumbs up, so I’d call it a success. I had plenty of left overs for about 3 meals even after the four of us ate dinner. And yes it reheated well.
