Fearing’s Ritz Carlton Dallas

I have to admit, I still thought Dean Fearing was a chef at the Crescent Hotel here in Dallas.  That is until I got my invitation to my friend Meredith’s Bridal Luncheon and realized he now has a restaurant at the Ritz Carlton Dallas.  I am by no means fancy so I rarely go to the Ritz or the Crescent which could be why I had no clue he’d switched hotels.  But I was pumped to try out his restaurant.

First of all, Fearing’s Restaurant is beautifiul! Not that you’d expect anything less at the Ritz, but I did a little walk around when I got there and loved the decor and the set up of the restaurant.  Because I was at Fearing’s for a private event we sat in the small room that was surrounded by the wine cellar.  It was the perfect size for our group.  The table was gorgeous, made of a rustic but refined long piece of wood and was beautifully decorated with amazing flower arrangements that we each got to take home with us!

We were all greeted with a glass of Champagne as we gathered and got seated.  Shortly after we sat down the waiters brought in bread baskets as we looked over the menu.  This wasn’t any ordinary bread basket; it had spicy cornbread muffins, slices of pretzel bread and what the waiter described as home made Cheeze-Its.  I think there may have been a crumb or two left by the time us ladies were finished with it!

We had about 4 different selections to choose from for lunch and I decided to be brave and go with the salmon.  I figured that if it were going to be good anywhere it would be here!  And man was I right.  Dean Fearing knows how to cook salmon (at least in my opinion)!

This is the Peach Barbecue Glazed Bay of Fundy Salmon served on East Texas Field Pea Salad with Mustard Saute´ed Green Beans and Pickled Papaya Slaw.  It was delicious.

I am not normally adventurous enough to order salmon because the fishy taste turns me off.  But this was salmon like I’ve never had before.  It feel apart in pieces rather than flakes as I’ve usually experienced.  Everyone who ordered it loved.  Not that anyone had any complaints about their selections.

Last but not least was dessert time.  We thought we were going to have to choose between the custard, the strawberry short cake and the tort (I think that’s what it was called), but no…we got a small sampling of each one!  My favorite was the strawberry shortcake.  The biscuit it was served on was something else!

Like I said Fearing’s is not somewhere I would normally venture to, but I am so glad I did!  If you want to check out there menu, click here.
