Hodge Podge is, well a hodge podge of items from your pantry with a little meat thrown in. And I’ve been attempting to organize my house including the pantry which lead me to the discovery that I already had most of the items I needed to make Hodge Podge.
Back in high school my friend Erin’s mom made this all the time, at least that’s how I remember it. It would just be in a pot on the stove and was so good! A few years back I asked Erin for the recipe and I was amazed at how easy it was to make! I’m not sure that there is an actual recipe or the origin of the recipe but in my mind the creator is Mrs. Orender.
Hodge Podge Ingredients
1 lb ground beef (or ground turkey)
1/2 can of Rotel (use the whole can if you want to make it spicy)
1 can stewed tomatoes
1 can sweet corn
2 cans minestrone
2 cans water
First step is to brown the beef. I used turkey this time to try and mix it up a little and really because I was curious how it taste. When I was cooking the turkey I added a little tomato juice to the skillet to add a little color to the turkey meat. Once the turkey was cooked I drained it and added it to the pot with all of the other ingredients. I use the minestrone cans to measure the water.
I also added a little bit of whole wheat pasta I had in my pantry to the pot just to add a little depth to it. After bringing the mixture in the pot to a boil, I let it set on low for 30 minutes. This is a perfect winter meal…if only it were winter like where I live. But it’s also a quick and easy week night meal that’s good any time of the year!
