I am not a squash fan at all. I try really hard to like it and I just can’t bring myself to like them. But Greenling decided I needed to give them another try when they included them in my last local box delivery. Not wanting them to go to waste I knew I needed to find a recipe I’d like that included squash. I stumbled upon a recipe my friend Misty shared with me a while back and it sounded perfect! Italian Chicken and Vegetable Crockpot
4-6 Chicken breasts
1 onion sliced in rings
small package of baby carrots
2-3 crooked neck squash
Italian seasoning
Italian dressing
4 Potatoes approximately
I cut this recipe in half because I knew 4-6 chicken breasts would be way more than I could or would want to eat no matter how good it would be.
This Italian Chicken and Vegetable Crockpot meal was actually a perfect recipe for my last Greenling delivery because that delivery included squash, carrots, potatoes and onion. First I sliced the onion into rings and placed them on the bottom of the crockpot to create a layer. Then I seasoned the chicken with Mrs. Dash Italian Seasoning and placed it on top of the onions slices. Because I opted to use the regular size carrots I peeled them then cut them into large chunks and dropped them on into the crockpot. Next up I sliced the squash on my mandolin to get even slices and added them to the crockpot. I used all three even though I halved the recipe because I didn’t want to come up with another way to cook them. Go ahead call me lazy, I won’t be mad!
Last but not least I cut up the potatoes into manageable chunks and added them to the crockpot. Finally I drizzled Italian dressing on top of all the ingredients.
Set the crockpot for 8 hours on low and viola dinner will be ready in no time! I was really shocked how good I thought the squash tasted. The whole thing was delicious and I did decide to finish it off with some fresh parmesan cheese.
This Italian Chicken and Vegetable Crockpot meal reheated really well. The only thing that wasn’t so great the second time around was the potatoes, but even the squash was good after it was reheated. Who knew I’d like squash? I never thought it was possible.
