Much like cornbread, I’m really picky about my Gingerbread. After years of looking for the perfect recipe, my mom’s friend gave her this recipe and it was just what I was looking for. If you like moist Gingerbread, then this is the recipe for you. Not to mention this is such an easy recipe, it takes no time to make!
Gingerbread
1 C Butter
2 C Sugar
4 Tbs Molasses
2 tsp Ginger
2 tsp Cinnamon
1 tsp Cloves (ground)
1 tsp Nutmeg
Pinch of salt
2 C Buttermilk
2 tsp Soda
2 eggs (well beaten)
3 C Flour, sifted
First melt the butter then add the next 7 ingredients and mix well.
Dissolve the soda in the buttermilk, then add to other mixture. I don’t think I have ever gotten the soda to dissolve completely before adding it to the initial mixture and the Gingerbread still turns out perfect.
Blend well. Add beaten eggs and then stir in flower. Grease and flour a 9 x 12 pan. Bake at 350 degrees for 35-40 minutes. It is super easy!
This would make the perfect Christmas morning breakfast. This Gingerbread is perfect hot or room temperature and it can last for several days because it is so moist.
