Don’t get me wrong I love a good bowl of spaghetti every once in a while, I don’t care if it’s spaghetti and pasta sauce or spaghetti with some butter and a little parmesan; there’s just a sense of comfort that accompanies spaghetti.
With that said, I’ve been doing my darndest to eat healthier and stay away from things that aren’t particularly good for me, so I haven’t been eating a lot of spaghetti. And boy do I miss it! Then Tiffany loaned me her Vegetti and oh my gosh am I obsessed!
You take this little contraption and turn zucchini or squash into noodles. Really it would work on any vegetable most likely but zucchini and squash are all that I’ve tried!
I’m not really a zucchini or a squash fan but when they’re turned into noodles, well…I wouldn’t say you’ll never want real pasta again, but I’m pretty positive you’ll be hooked just like I am.
First I tried zucchini, but I’d left it out on the counter a couple of days and not in the fridge so it was a little soft but still worked great. I poured about a tablespoon of olive oil into a pan and let it heat up. Then I cut one end of the zucchini off and began twisting it in the Veggetti and noodles began to fill the skillet.
I cooked them for a few minutes til I could hear a sizzle. Then I added in some pasta sauce and added some ground turkey to reheat in the pan, mixed it together and wow! I really couldn’t tell that I was eating vegetables with everything mixed together. Sure the “noodles” had a different textures but the taste wasn’t all that different. There’s a good possibility you could fool your kids….
The next night, I tried yellow squash noodles and I think I actually liked them better.
Once again I heated up a little olive oil and then started making the “noodles” with the veggetti and letting them fall into the skillet. I also added in some onion powder and minced garlic tonight to experiment a little. Then I added the pasta sauce and some of the ground turkey I’d cooked earlier in the week.
Even up close I think it’s hard to tell there aren’t any actual pasta noodles in skillet.
