Chicken, Onion & Fennel Pizza

If you follow me on Instagram or Twitter then you know I got  my first Greenling delivery!  Greenling delivers a collection of local fruits and vegetables.  If you live in Texas and are interested send me your email address and I’ll refer you (I think we both get a deal).  This week’s delivery included Fennel.  I have never in my life cooked with Fennel, okay well I’ve cooked with Fennel Seeds, but I had no idea what an actual fennel looked like.  So, I of course turned to Pinterest for some inspiration and stumbled upon this recipe and came up with the idea for Chicken, Onion & Fennel Pizza.

Teal over at Life Is a Run told me about the Namaste Pizza Crust Mix and I’ve been hooked ever since!  Here in Dallas, I’ve found Namaste at Whole Foods and Central Market.  Each packet will make 2 pizza crusts.

There are a few tricks to remember about this crust mix.  You want to be sure to spread it very thin.  Also, you will want to flip the crust to get it more crispy.  You are told to flip the crust on the package but I totally missed that the first time.  The directions will call for “oil” so following Teal’s directions I used olive oil and that’s the only type of oil I’ve ever used.  You’ll mix the crust with a mixer:

Once it is completely mixed, you’ll want to spread the dough out on the pan you are using.  Don’t be surprised if it looks more cake like then doughy.  That is completely normall.

While the crust was in the oven for the first 15 minutes, I worked on my toppings.  I cubed my chicken breast, sliced the fennel, an onion and about 4 cloves of garlic and added them to a skillet I’d put some olive oil in and allowed to warm.

Once the toppings were ready I drizzled a little olive oil on the crust (however because the toppings were cooked in olive oil I should have skipped this step) and shredded the fresh mozzarella.   This is actually trickier then you would think and I have a feeling pre-shredded mozzarella would have worked just fine!  Then I loaded the pizza with my toppings and added the little remaining mozzarella I had and added a little fresh parmesan.

Chicken, Onion & Fennel Pizza Ingredients

Pizza Crust
1 chicken breast (could do more if you want)
1 onion, sliced
1 fennel, sliced
4 garlic cloves, sliced
8 oz fresh mozzarella
parmesan cheese
2 Tbs (approximately) olive oil
